Pulled Chicken Tacos
Pulled Chicken Tacos
This fun recipe makes 10-12
tacos. This is great when having over family, friends or when it’s just you
chilling at home.
INGREDIENTS
- 500g chicken breast
- 2 bell peppers
- 1 red onion
- 3 tbsp oil
- 1 tsp cayenne pepper
- 2 tsp ground paprika
- 2 tsp Adobo seasoning
- 2 tsp Cajun seasoning
- 1 tsp red pepper flakes
- 1 tsp dried mixed herbs
- ½ tsp salt
- ½ can chopped tomatoes
- 1 cup water
- 10-12 corn tortillas
- grated cheese of your choice
- coriander and diced red onion as toppings
INSTRUCTIONS
- In a bowl, mix the chicken, bell peppers and red onion.
- Add in the oil.
- Now add in the cayenne pepper, ground paprika, Adobo seasoning, Cajun seasoning, red pepper flakes and dried mixed herbs.
- Mix it all together.
- Separate the chicken from the mixture now.
- Pan fry the chicken until golden. Remove from the pan and set aside.
- In the same pan, heat up the mixture and add in the chopped tomatoes.
- Shred the chicken breasts. Add it back into the pan.
- Add water and simmer for a few minutes until the flavours have combined and completely covered the chicken.
- In a separate pan, put in your tortilla, face down, add grated cheese.
- Top off half of the tortilla with the chicken mixture, with coriander and diced red onion on top.
- Fold the tortilla to close it and pan fry until golden brown.
